 When we were 24 years old we tooked this picture. At that time, I was working with MAMBWE WORKSHOP as a welder at  and Mr. Hasegawa as a Volunteer at The Capital Development Authority
  (CDA) Dodoma Tanzania.

  After 16 years later on 08/08/2011, Mr. Hasegawa visited me from Japan and we tooked another picture which shows us look happier but do not change our minds.


  During that tour, we visited ITISO village to see sesame farmers, 

We Drive 60km from Dodoma to ITISO village via Arusha road 

              
Here we show how the villagers were cultivating sesame and harvesting it.

During this tour, we also visited CETAWICO winery. This factory is located in Hombolo Village,           Dodoma Region. Where we learned and saw traditional farming methods of grapes   that guarantee high-quality products of CETAWICO Factory.

       In 2014 September, I registered another company Matoborwa Co., Ltd. to undertake business in Food Processing, Post-harvest crop activities, Seed Processing for propagation, and Support Activities for crop production.

          About the Business:
        Matoborwa is a traditional name for preserved dried sweet potatoes in central Tanzania. We’re         making Matoborwa, dried fruits (mango, pineapple and banana) and some other confectioneries in  Tanzania using Japanese technology.

     Matoborwa Co., Ltd. was owned by four shareholders at the beginning and later on, one more shareholder joined the company.

Matoborwa Co., Ltd is a food company in Tanzania, East Africa. We process the agricultural products of the region to deliver nutritious and healthy food products. Matoborwa was established with the generous support of Terunuma Katsuichi Shoten in Ibaraki, Japan.

The company was founded in 2014. We started our business by registering a Japanese sweet potato variety called “Tamayutaka” and producing dried sweet potatoes. As a result of working together with farmers to improve the quality, we are now able to deliver excellent dried sweet potatoes.

Dried sweet potatoes are made by saccharifying the starch of sweet potatoes without adding sugar. Since 2016, we have been using this technology to produce sugar-free dried mangoes and pineapples, which have been well enjoyed by lots of customers.

We have been trying to develop products for the African market since early on. Our first product was Imokempi, deep-fried sweet potatoes. The gentle taste of sweet potatoes dipped in molasses is loved by people across borders. Recently, our nut bars have become popular.

While the young population continues to grow in the continent, there is a strong need for affordable, good-quality food. We hope to open up the possibilities of manufacturing in Tanzania in the field of agro-processing.

        Every successful journey has a starting point, September, 9th, 2014 Matoborwa Co., Ltd was established as a sweet potato confectionery manufacturer in the city of Dodoma Tanzania. The Company provides two types of snacks, which are semi-dried sweet potatoes and sweet potato crisps. The sweet potato is cultivated without using chemicals, and processed into 100% natural, healthy, delicious snacks, by using Japanese technology.

After its establishment in the domestic market, Matoborwa Co., Ltd. expanded its operation to the overseas market. The first target was Japan, And one year later, Matoborwa Co., Ltd introduced new products derived from the fruits (Dried fruit products) currently in the market.

Although professionally I am a construction engineer and mechanical engineer, I decided to concentrate on agriculture and food processing to persuade young people to overcome the misconceptions that a better life is only available to a person who is employed, A Better life can be achieved even by a self-employed person in agriculture. If you know what to do in agriculture, it is easy to succeed through agriculture.

Agriculture is the main industry in Tanzania. It accounts for one-fourth of GDP and provides employment opportunities to three-fourths of the workforce in Tanzania.

Ask of taste

      Matoborwa is a locally processed food made from sweet potatoes (Ipomoea batatas) in the Tabora region of the Western Zone and in some parts of the Lake Zone of Tanzania. To make Matoborwa, the fresh sweet potato roots are first boiled in water for 30-40 minutes, after which they are peeled, sliced, and dried in the sun. The resulting sun-dried slices are mostly brown in color, quite sweet, very brittle, and hard in consistency. This way of processing sweet potatoes ensures that they can be stored for over six months, and are less likely to be attacked by pests.   This technique for processing sweet potatoes was first developed by the Nyamwezi tribe of the Tabora region in the Western Zone. The name Tabora originated from the word Matoborwa, meaning “sweet potatoes,” which was a staple food for Nyamwezi people who form a large part of the population of the Tabora region. Visitors could not pronounce the word Matoborwa and instead, they called it tobora, which later on came to be known as Tabora, the name of the community. This sweet potato processing technique has now spread to other zones and people, such as the Sukuma people of the Lake Zone. Matoborwa is made for home consumption, and not sold commercially.   Once, traditional preparations of sweet potatoes like Matoborwa were staple foods, usually served twice a day (at the morning and evening meals). Today, they have lost their status due to changes in consumers’ preference from traditional foods to wheat and rice-based products. Because of this, future production and consumption of traditional foods like Matoborwa are at risk of being lost. 

      The traditional products, local breeds, and know-how collected by the Ark of Taste belong to the communities that have preserved them over time. They have been shared and described here thanks to the efforts of the network that Slow Food has developed around the world, with the objective of preserving them and raising awareness.
